How I Plan Our Weekly Menu//and Actually Save Money!

When I first started planning weekly menus for our family, I noticed that we seemed to spend more than if I went to the grocery store without a plan. I couldn't understand it. I'd always heard people talking about how planning a menu saved them money.

When I planned a menu before, I usually thought of all the interesting meals I could make, with almost every day being a new recipe or something out of the ordinary and therefore almost every ingredient had to be purchased that week. Not only was this expensive, but it was exhausting. I was hardly ever making easy meals because I had looked up all these "cool" recipes. Needless to say, it didn't last very long.

Then, I finally got finance conscious. I wasn't trying to use a menu in the same way any more. Before it had been to make sure that we had exciting meals every night. Now, it's about saving money by wisely using what I have, and trying to be creative with it.

Here's how I start:

Look in the Pantry and Refrigerator. What do I already have? Beans, rice, corn, chicken makes a great chicken quesadilla or something similar. Instead of starting with a recipe and then buying ingredients, I work backwards. Work with what you have and find recipes that fit.

You don't have to only use ingredients that you have in your home, but make sure that's the jumping off point. If you want to save money, try to work with what you have. I don't usually keep things like fresh basil or cilantro in my refrigerator, but if I do buy them, I try to come up with multiple recipes that use them so that I don't just use it once and let the rest go bad.

Another great way to save money is to make things fresh or from scratch. Plain oats are less expensive than pre-sweetened instant oatmeal. Learn to make your own sauces for spaghetti instead of buying boxed pasta meals.

Another thing to consider when planning your menu is your weekly schedule. Consider the amount of time you will have to get everything ready and plan accordingly. If you're really busy one night, you don't want to be making egg rolls from scratch (trust me, they're delicious but can take a LONG time.) For busy nights, have quick, simple recipes. Save the more labor intensive or long-cooking ones for more relaxed days.

Write down your plan! Having a menu doesn't make you more organized if you don't remember what was on it. I made us a template and put it in a page protector (laminating would probably work better) so that we can use it as a dry erase board. You could also put yours in a picture frame with a glass front, or paint it on a chalk board. Whatever works for you!

Then, once you have everything planned, make a grocery list. Any ingredients that you don't already have go on the list. When you go shopping, stick to your list! It helps if your stomach is full when you go to the store, otherwise those impulsive buys will be a lot more tempting!

Healthy Smash Cake Recipe

This week was Sam's first birthday! Ever since I heard about smash cakes I've been wanting to do one for him, but I didn't like the idea of feeding him tons of sugar and other things that I haven't really let him eat yet. I know, I'm a hypocrite. I love anything unhealthy (except for twinkies) but I don't want my baby to be the same, so I'm trying to help him eat well. I found this recipe over at Fit Mama Real Food and was so excited that it seemed so healthy. I also loved that I could substitute the baby food in my pantry (that Sam is starting to refuse to eat) for several of the ingredients!
Here's how you make it:

You will need:

1 jar of applesauce, 3-4 jars of bananas, 3 tablespoons of melted coconut oil, 1 teaspoon of vanilla extract, 3/4 cup of baby oatmeal cereal, 3/4 cup of whole wheat flour, 1 teaspoon of cinnamon, and 1 teaspoon of baking soda.
*all of the jars of baby food that I used are 4 oz



Mix Bananas and applesauce,



coconut oil,



and vanilla extract in one bowl.



In a separate bowl, mix together flour, oatmeal, cinnamon, and baking soda.



Combine wet and dry ingredients and mix thoroughly.



Grease your baking dishes. (I learned this greasing technique from my mother in law: put some coconut oil into the pan and wipe it around with a paper towel. You can also just use cooking spray.)



Then pour in your batter.



Bake at 375 degrees Fahrenheit for 35 minutes and allow to cool before frosting. When I took mine out of the pans they started to lose their shape so I popped them back into their dishes and waited until they were room temperature to take them out again and they held up well after that.

For frosting I used plain greek yogurt (and then went a little crazy with the sprinkles!)

Sam loved it, and he really likes the non-frosted, non-sprinkled muffins a lot as well! For pictures of the smashing, go here, and here.

Ingredients

  1. Mix Bananas, applesauce, coconut oil and vanilla extract in one bowl. (I used five jars of bananas and found it to be too much. I would suggest three or four.)
  2. In a separate bowl, mix together flour, oatmeal, cinnamon, and baking soda.
  3. Pour wet ingredients into dry ingredients and mix thoroughly.
  4. Pour batter into greased baking dishes. I used two bowls that were four inches across and filled them two inches deep. I had enough batter left over to make 9 mini muffins for Sam to snack on. 
  5. Bake at 375 degrees Fahrenheit. Mine took about 35 minutes to cook. If you're using shallower pans, do less baking time. 
  6. Allow to cool before frosting. I would suggest in the pan. When I took mine out they started to lose their shape so I popped them back into their dishes and waited until they were room temperature to take them out again and they held up well after that.

French Baguettes

I have to admit that with all the talk about the protests and riots and barricades in Kiev, it's made me think a little bit about Les Miserables. So, yesterday I decided to watch it. In the first half of the movie there are several references to bread so, naturally, I started making a couple of baguettes while I watched! I found a fantastic recipe on allrecipes.com, but the instructions only tell you how to make it in bread machine. I don't have one of those, so I adapted the recipe for making it by hand!

Ingredients:
1 cup Warm Water
2½ - 3 cups Bread Flour
1 Tablespoon White Sugar
1 teaspoon Salt
1½ teaspoons Yeast


Directions:
1) Put warm water, yeast, and sugar in bowl and let it sit about 10 minutes.
2) Add 2½ flour and salt. Mix until thoroughly blended, adding more flour as (and if) needed. Kneed for about 10-15 minutes.
3) Place in greased bowl and cover with plastic wrap. Let it rise a half hour, or until doubled in size.
4) Punch down dough. Roll out into large rectangle (about 16" x 12") and cut in half.
5) Roll each half into a loaf. Make sure to get the air bubbles out as you do this. Place loaves on greased baking sheet at least 3 inches apart. If you want to, now is the time to add those fun, decorative gashes. Cover with plastic wrap* and let it rise about a half hour, or until doubled in size.
*Now is a good time to start pre-heating the oven to 375 degrees.
6) Remove plastic wrap. Spray loaves generously with water and place in oven on center rack. The water will help make the crust more thick and crusty, the way a baguette should be. I have no idea why this works, but it does. Bake 20-25 minutes, or until golden brown.

We ate one last night with garlic spread (easiest and tastiest recipe ever. I'll share it soon) and tonight we'll probably make some bruschetta since we need to use the bread before it gets stale :)

Dutch Baby Pancakes

Breakfast anyone?
This is a super simple, totally delicious, and the preparation takes 5 minutes tops. It's really easy to make a small batch for 2 (that's what I make for my little family of 2) or a big batch for 8 (which is what my mom did back home when I was growing up.) I meant to get a picture of what it looks like when you serve it, but Hubby and I were hungry so by the time I pulled the camera back out the plates were empty. Oops :)

What you need: (for a small batch)
2 Eggs
1/2 Cup of milk
1/2 Cup of flour
3 Tablespoons of butter
and
Casserole Dish or Cake Pan (size depending on how much you're making. For a small batch, I use a casserole dish my great grandmother gave me that is about 7''x9''. If you were to use 6 eggs a 9"x13" pan would be appropriate)

Directions
1. Preheat oven to 425º

2. Put butter in your pan, then place in the oven to melt.


3. Blend eggs, milk, and flour.



4. Pour mixture into the pan of melted butter. Bake for 25 minutes.


5. Take it out of the oven and voila! A fluffy, buttery, suffle-ish breakfast that is ready to EAT! My favorite way to eat this is with syrup and powdered sugar. Some people like it with berries, sour cream, brown sugar, but you can do whatever you like!

Nifty Cleaning Tip: How to Clean Vomit

I know this isn't a very pleasant topic but nothing is worse than barf stains and smells in your carpet, car, or anywhere. Who knew that 2 inexpensive things you already had in the pantry were all you needed to clean it? I'm so grateful for simple, inexpensive solutions to life's little challenges!

What you'll need: 
Baking Soda
Vinegar (White vinegar, NOT balsamic)
A wet rag
Paper towels (or rags if you don't mind cleaning them later)

1. Clean up the area as best you can with the wet rag (blot, don't rub. Rubbing works the vomit, or anything wlse you're trying to clean into the carpet fibers. Wait until you have cleaner to do this.)
2. Sprinkle baking soda so that it completely covers the vomit
3. Sprinkle Vinegar (not too much) over the baking soda so that it foams lightly
4. Wait a while for it to dry a bit, I waited about a half hour, then absorb the extra moisture with paper towels.
5. repeat steps 2 - 4 at least once. 
6. Allow bakingsoda/vinegar to completely dry, then vacuum it up!

Now the stain AND the smell are gone! I know it works because my husband was sick in the car and even when the car gets hot it doesn't smell! You can smell vinegar for about a day afterwards but that dissipates pretty quickly. I've been told this also works with pet smells and stains in the carpet.

Always Looking Out for Me

God is always looking out for me. Several weeks ago I decided that I really needed to make some kettle corn, which is done by putting popcorn, sugar, and salt in a pot with HOT oil, caramelizing and melting the sugar, and it is delicious. Unless you do something wrong, which I'm still not sure what that was last night, but the sugar started burning before the popcorn was done and some of it popped and stuck to my face as I was attempting to save it. So I had molten sugar hardening to my cheek, hot oil in my eye, AND burnt kettle corn. I ran to the sink and began trying to wash the the sugar off my face, which had already blistered, when I looked in the mirror and realized everything was blurry in my left eye. I looked closely and saw a spot on my cornea where it had been burned. Despite the mascara running down my cheeks, the pain that was probably twisting up my face as I endeavored to see, and extreme embarrassment, I went into the living room where three guys from our ward were sitting, explained the situation, and asked if they could give me a blessing.

They did this, and I was told that in due time the pain would subside and my vision would be restored. I went to bed with a bag of ice on my face praying that "due time" didn't mean very long.

The next morning I was a wreck. I couldn't focus my left eye, it felt like I'd burned the underside of my eyelid when I was blinking away hot oil, and I'd pealed a few layers of skin off my cheek with the sugar and popcorn. But lo and behold, my lovely roommate had made breakfast for her boyfriend's birthday and had plenty of extra so she shared with me and the other roomies. So sweet.

There was this boy named Cameron who I really, really liked and it was his birthday, too. I was supposed to go hiking with he and his friends but I did not feel in any way up to the task so I called him and said I'd have to cancel. He told me that the whole trip had been cancelled due to his suddenly becoming rather ill (with what we found out after several weeks and 2 trips to the doctor was bronchitis) and he wanted to stay home and rest as well.

I had already made a birthday present for him, so I gathered it up, determined to walk the one and a half miles to his house to give it to him because he was sick on his birthday, and I just really wanted to see him. But my body had other plans. I lost all energy and the will to open my left eye so I lay down on the couch and resigned myself to at least an hour of napping...which never occurred because he called shortly thereafter and said he was on his way to my apartment. On foot. To see me, on his birthday, when he was sick. He said he just couldn't stand to be inside any more and he'd promised to visit his cousin, but it later came out that he really just wanted to see me. ;)

He came over, we held hands (not for the first time), and he asked if I would like to keep dating him and only him. Let's just say I was ecstatic. We both went to the doctor the next day and I was told that my eye should be perfectly healed within the week, and was WAY ahead of schedule for a burn that severe having happened so recently.

Let me just say, the Church is true, priesthood is real, and our Father in Heaven does hear and answer our prayers. Not only pertaining to my healing, which was really miraculous, but also in his helping me find Cameron, who has already answered so may of my prayers just by being himself.

Nom nom nom: not my usual kind of post


Tonight I was craving Cafe Rio, but lacking a car and having a full refrigerator of food that needs to be used by Thursday before I leave for Christmas break, I decided to stay in and try my hand at recipe inventing. Ok, I didn't completely invent it, I borrowed ideas from this blog. I really quite enjoyed it!

The change I made from my normal tacos that surprised me the most, but also was, in my opinion, one of the best additions, was putting brown sugar on the chicken along with the taco seasoning, to give it that sweet, savory flavor.

The rice was also completely different from how I normally make it (rice, water, done.) I added butter, garlic powder, and lemon juice to the water before I cooked it, and then added lemon juice and sugar after it was done. I added too much of the last two ingredients, and it was a bit too sweet, so I added a pinch of taco seasoning to tone it down, and once it was paired with the chicken and lettuce, it was sublime.

The lettuce actually muted the other flavors a bit, so that's a good thing for me to remember for the future. I also added some crumbled up tortilla chips to give it a little crunch

So, basically I'm really proud of myself and plan to add this to my repertoire. Thank you for listening to my bragging.
